Undercounter and Work Top Refrigeration Buying Guide

Looking for extra storage space in your establishment? Have you looked underneath your counters? An undercounter refrigerator or freezer is a great solution to provide additional cold storage space.


 

Undercounter Refrigerators and Freezers

Fitting conveniently under counters, undercounter refrigerators and freezers are available in a variety of sizes, ranging from 27” wide to over 93” wide. One, two, and three door models are typically offered, as well as drawered models, featuring pull out drawers instead of doors.

The standard height for an undercounter fridge is 36” tall. The height takes into account casters or legs. If you need something shorter, manufacturers also offer “low profile” and “ADA height” models. Low profile undercounter units are around 32” high and are designed to fit underneath an ADA height counter. ADA height models are around 34” tall, which makes them sit flush to an ADA height countertop. One of the most important factors to consider when purchasing an undercounter refrigerator or freezer is the compressor location. Depending on where the exhaust is located on the unit, you will want to ensure that there is enough clearance on that side, so that the unit can breathe and operate efficiently. Spec sheets (found on each product page) will give you clearance guidelines so that you provide proper ventilation for your unit. If you’re hoping to squeeze your undercounter fridge into a tight space, then you will want to look for a “front breathing” unit. Front breathing models feature the intake and exhaust on the front of the unit, meaning the clearance requirements on the sides and back are much shorter.


 

Work Top Refrigerators and Freezers

Similar in function to undercounters, work top refrigerators and freezers have a raised backsplash that is bolted or welded to the back of the unit, protecting your wall from splashes and other food messes. Work top refrigerators function is right there in the name: It’s designed to give you a surface to do prep work while also providing cold storage!

There are also ADA models available for work top refrigerators and freezers. When you see these, it’s important to note that the height is referring to the surface of the top, not the top of the backsplash.

Chef Base

If you’re looking for cold storage close to where you’ll be cooking or preparing it, a chef base is an excellent choice! Think of a chef base as an equipment stand, but instead of there being open space underneath for pots and pans, there are refrigerated drawers that allow you to keep ingredients in the same prep or cooking area, saving you time to go back and forth to gather ingredients. In addition, chef bases maximize the space in your kitchen.

Some considerations will need to be made before investing in a chef base. The most important is making sure you have enough space to accommodate both the base and the equipment you’ll be using on top of it. You’ll want to make sure your equipment is mounted on legs to sit atop the chef base. This gives the equipment enough clearance from the top of the chef base so that hot air isn’t directly transferring from the bottom of the cooking equipment to the top of the base.

Chef bases are typically available in a flat top and marine edge. A marine edge is a grooved edge that is great for containing spills. However, know that using a marine edge will decrease the usable space of the top to mount your equipment. Also, it’s important to know the weight limit of your chef base to ensure that your equipment will not exceed that limit.
