Size Options

Holding cabinets and proofing cabinets are available in a variety of sizes because one size does not fit the needs of every kitchen operation!


  • Less than 34" tall
  • Easily fits under counters and best for small kitchen options

1/2 Height

  • 36-41" tall
  • Best for low volumne kitchen operations

3/4 Height

  • 54-57" tall
  • Best for medium to high volume kitchen operations

Full Height

  • At least 65" tall

Warming cabinets are made as either insulated and non-insulated. Insulated cabinets help preserve the heat within the cabinet more efficiently, which saves money and energy. Generally speaking, insulated cabinets are more expensive than non-insulated cabinets, but they do give more options for operation, such as transportation. Because food that is being served off-site requires that food stays warm longer, insulated cabinets are generally better equipped for transportation. However, in a low volume kitchen where transportation of the cabinet is not necessary, an uninsulated cabinet is ideal. Plus, it is more economical on the front end!

Interior Configurations

The interior configuration will determine what type and size of pans can be used within the warmer cabinet. The configuration will also determine how operators can load pans.

Door Type

Warming cabinets offer two types of doors: glass and solid. Glass doors allow operators to see product without having to open the door and lose heat. Meanwhile, solid doors are advantageous because they are extremely energy efficient and create minimal ambient heat.

Door Configuration

Full height warmer cabinets are great for high volume operation kitchens. However, opening the full door will cause loss of heat. Avoid this problem with a dutch door – or a split door. If heat loss is not an issue with the kitchen’s operation, the full length door is still a great option.

Control Type

Easily keep the food warming cabinet at the perfect temperature with either manual or thermostatic controls. Manual controls require regular monitoring while thermostatic controls provide more precise temperature controls. An additional difference in controls is their placement. Top mount controls are safer during transport and during daily operations of a busy kitchen. These controls are also easier to see and access. However, there are models made with bottom mount controls, so it is important to ask where controls are located when purchasing.
