This full-size holding cabinet offers flexibility with the ability to quickly switch between holding and proofing. A forced convection system gently circulates air through the cabinet, keeping food at temperatures between 80°F and 190°F with the assistance of thermostatic controls. The holding cabinet is made of aluminum for long-lasting durability in a high-volume commercial kitchen. Inside the cabinet, 12 pairs of universal wire pan slides hold up to (12) 18"x26" sheet pans or (24) 12"x20"x2-1/2" food pans, and they are adjustable in 1-1/2" increments to easily configure the interior to fit the needs of your kitchen.

The Metro C5E9-CFC-U Metro C5 E-Series Full-Height Holding/Proofing Cabinet features a clear, full-length door that allows operators to check on food without opening the door and causing any heat loss. The door closes securely with a magnetic pull latch, and it swings open to 180° for easier loading and unloading. This holding and proofing cabinet is also simple to move around your kitchen thanks to a set of 5" swivel-plate casters, including two that lock for greater stability.
