Commercial sheet pans come in various sizes. Full-size is 26" x 18", half-size is 18" x 13", and quarter-size is 13" x 9". Other sizes include two-thirds at 21" x 15" and eighth-size at 9.5" x 13".
They are typically made of aluminum or stainless steel. Aluminum is lightweight, less expensive, and conducts heat well. Stainless steel is more durable, resistant to corrosion, and can withstand higher temperatures. Some pans feature a non-stick coating for easy food release and cleaning.
Baking sheets are usually flat with no sides or very low sides, ideal for baking cookies. Restaurant sheet pans have raised sides, usually 1 inch high, and are more versatile, suitable for baking, roasting, and other cooking tasks.
Wash with hot, soapy water after each use. For stubborn residue, soak in hot water and use a non-abrasive scrubber. Dry thoroughly to prevent rusting. To maintain their non-stick properties, season aluminum pans periodically with oil. Store in a dry place to prevent moisture damage. Avoid using metal utensils on non-stick surfaces to prevent scratching.
