Designed for baking, roasting, grilling, steaming and poaching, this Rational CMP61 - Half-Size Gas Combi Oven is all you need for your commercial food set up. Also known as CombiMaster, the oven cooks food 15% faster than a convection oven. The hot-air steamer (Combi-steamer mode) on this oven conforms to DIN 18866 for most cooking methods that are used in commercial kitchens, allowing the optional use of steam and hot-air in combination, successively or individually. With five cooking modes in one oven, Rational CP61 provides unlimited culinary selections. The oven cabinet has rounded corners for effective cleaning and is fitted with a powerful steam generator fitted in the interior. The DIN 1.4301 stainless steel exterior and interior have overall dimensions of 331/4" W x 303/8" D x 303/4" H.The oven has a safety temperature limiter for steam generator and hot-air heating along with rapid cool down and automatic cleaning function. The manually operated unit has mode selector control for cooking modes, and separate controls for core temperature, temperature and, time settings. For measurement of the core temperature, the oven has a probe with a temperature range of +35-degree Fahrenheit to +575-degree Fahrenheit. The hygienic cooking cabinet has a splash guard to stop the water from spilling out. It has an LED illuminated display that is visible from a distance and features the HACCP data output along with a software update option via an integral USB port. The Rational CMP61 Half-Size Gas Combi Oven has removable swiveling grid shelves on it with a distance of 2-5/8" between rails. The model has a manual cleaning program, a menu-guided descaling program and requires a 3/4" water connection. The steam generator is automatically rinsed and drained with a pump installed in the unit. Users are provided with individual programing options of 50 cooking programs, each with up to 6 steps. Rational CMP61 is available in natural (49,000 BTU) to LP (48,000 BTU) gas variant. The diagnostic system on the unit has automatic service notices displayed on it for cleaning, care, and operational safety. Also, the maintenance-free grease removal system contains no additional grease filter, which makes it easier to carry out the cleaning process. The cool-down function allows for quick fan cabinet cooling while the fan has an integral impeller brake installed on it.The unit has a rear-ventilated double-glass panel on the door along with a hinged inner panel. There are separate solenoid valves for normal and softened water. The fixed waste-water connection conforms to SVGW requirements wherever it is permitted. Rational CMP61 automatically adapts to the installation location and can easily hold (6) 18" W x 13" D sheet pans or (6) 12" W x 20" D steam table pans. The door handles have left/right and slam function while the clear control panel has pictograms for easy operation. Its height-adjustable feet provide a comfortable operating position. The hand shower attached to it has an automatic retracting system. The unit allows a maximum rack height of 5-1/4 ft. when the original stand is used.Weighs 279 lb.Features include:
