This Central Exclusive HL2-18 Non-Insulated Holding and Proofing Cabinet has a welded and riveted single wall, a non-insulated structure that is welded to the base. Made of aluminum, the base frame is made of 0.125 in. natural aluminum while the exterior is 0.63 in. thick aluminum with 2V finish. A digital thermometer is installed that displays temperature in increments of one degree. Bottom mounted heat & humidity system has a 1700 watt coiled incoloy-sheathed heating element. The stainless steel water-reservoir has a 350-watt element affixed to its bottom. For active humidification, the water-reservoir mounted below its pan with a manual fill capacity of 2.5 qt. Its high impedance fan motor is protected while the fan motor effectively circulates air and humidity.
HL2-18 is capable of heating to 190-degree Fahrenheit and preheats to 160-degree Fahrenheit within a timeframe of approximately 20 minutes. The single panel tempered glass door on this product is set in an extruded aluminum frame to give it maximum strength. Users can easily reverse the door for efficient usage. There is a drip trough at the base of the door and a high-temperature Santoprene gasket mounted on its frame.
