What to Consider When Selecting a Deck Oven:


1. How many pizzas will need to be produced per hour?

  • The overall size and number of decks determines how many pizzas can be produced per hour
  • Sizes range from 19" x 19" for individual pizzas to 84" x 51" for higher volume and larger sizes


2. Will menu items other than pizza be produced in the oven?

  • If yes, the deck height needs to be considered. For example, a whole chicken needs more height than a pizza. Remember the higher the deck height the less heat retained.


3. What type of dough will be used?

  • Countertop units of 3200 watts or more are great for fresh dough
  • All other units are better for par-baked or frozen dough


4. What deck surface is best for your style of pizza and volume?

  • Ceramic Hearth Bricks - Promotes even bottom heat distribution and crispy old world style finish. Quick recovery.
  • Brick Lining - Faster bake times, quicker recovery, high volume.


5. Does your kitchen have correct utility hook-ups?

  • Proper BTU per deck
  • Proper electric for voltage and phase


6. Does your kitchen have the correct ventilation?

  • Free standing deck ovens must be under a standard or direct hood


7. Will you need an insulated deck oven?

  • Insulation helps keep the surface of the oven cooler
  • Insulation provides better heat retention
